Heat oil in large pan add in garlic, onions, sweet potato and butternut squash, cook until soft.
Add stock and bring to the boil.
Turn down heat, cover and allow to simmer for 30 minutes.
Use a hand blender to blend all the ingredients together until smooth.
Divide into 3 even portions.
