Cook low protein rice according to packet instructions. When cooked, rinse in cold water and drain.
Heat oil in pan, add onion, carrots, courgette and pepper and fry on a high heat for 4-5 minutes.
Add tinned chopped tomatoes and fry for a further 2 minutes until vegetables are soft.
Add water and rice to vegetable mixture and cook for 1-2 minutes.
Divide into 4 portions and sprinkle Violife over the top.
