Pre-heat oven to 200°C /fan 180°C/gas mark 6.
Cut sweet potato in to thin fries.
In a large bowl mix together olive oil and brown sugar.
Add fries to mixture and coat.
Place fries on a greased baking tray.
Cook for 35-45 minutes until golden and crispy.
Add cinnamon, ginger or other herbs and spices to the oil and sugar mix
Add a table spoon of BBQ sauce or maple syrup into coating mixture before baking for extra flavour.
