Stuffed Green Peppers

step 1

Pre-heat the oven to 160°C/fan 150°C/gas mark 4

step 2

In a bowl, mix together the low protein rice, mushrooms, red pepper, aubergine, coriander and stuff into the pepper.

step 3

Replace the top of the pepper and brush with the oil.

step 4

Bake in the oven for 30 minutes.

  • 60g Mevalia rice, cooked (cook as per label instructions)
  • 50g Mushrooms, finely chopped
  • 50g Red pepper, finely chopped
  • 40g Aubergine, finely chopped
  • 10g Fresh coriander, chopped
  • 1 Green pepper, top removed and set aside and seeds removed
  • 1 tbsp Oil
