Parsnip Pancakes
- RECIPE MAKES: 8 pancakes
- PREP TIME: 10 minutes
- COOK TIME: 20 minutes
Method
step 1
In a bowl, mix all the ingredients and blend until smooth.

Place a frying pan over a medium heat and add the butter.
step 3
Using a pastry brush, spread the butter so that the whole pan is covered.
step 4
Pour a tablespoon of mixture into the pan and spread into a circle with the back of the spoon.
step 5
Allow to cook until bubbles form on the surface of the pancake and flip.
step 6
Cook for a further minute and remove from the pan.
step 7
Repeat steps 4-6 until the mixture has been used up.

- 100g Parsnips, peeled and grated
- 150ml ProZero
- 90g Fate Low Protein All-Purpose Mix
- ½ tsp Egg replacer
- ½ tsp Baking powder
- 20g Butter
- You will need an electric hand-held blender and a pastry brush.
