Mushroom and Leek Sweet Potato Pie

Step 1

Preheat oven to 180°C/fan 160°C/gas mark 4

Step 2

Heat the butter in a large saucepan over a medium-high heat, when melted add the leeks, mushrooms, onions and garlic and sauté for 5 minutes.

Step 3

Stir in the Fate Low Protein All-Purpose Mix and mix thoroughly.

Step 4

Pour in the ProZero, stir and let the mixture simmer for 10 minutes, until the sauce has reduced.

Step 5

Add the Violife Creamy Original, stir through and pour the mixture into a casserole dish.

Step 6

Meanwhile for the topping, boil the sweet potatoes in water for approximately 20 minutes or until soft.

Step 7

Drain the sweet potatoes and mash with the butter.

Step 8

Add the sweet potato mash to the casserole dish and spread out using the back of a spoon to cover the filling.

Step 9

Bake for 45 minutes on the middle shelf or until crispy on the top.

Serving Suggestion: Serve with permitted vegetables.

  • 20g Butter
  • 100g Leeks, chopped
  • 100g Mushrooms, chopped
  • 50g Onions, chopped
  • 2 Garlic cloves, crushed
  • 2 tbsp Fate Low Protein All-Purpose Mix
  • 200ml ProZero
  • 2 tbsp Violife Creamy Original
  • For topping:
  • 300g Sweet potato, cut into chunks
  • 50g Butter
  • You will need a 15cm casserole dish.
