This low protein ice cream recipe is perfect for St. Patrick's Day or if you just fancy a refreshing and tasty dessert! This Mint Chip Ice Cream is exchange free and perfect for those on a low protein diet.
Add ProZero whipping ‘cream’ into a bowl and use an electric hand-held mixer to whip the for about 2-3 minutes until it is thickened, light and airy.
Add the mint extract, sugar and green food colouring to the ‘cream’ and mix well.
Pour the mixture into an ice cream maker and follow manufacturer’s instructions.
Mix in chopped Vitabite then serve.
For a more intense flavour, mix in some finely chopped mint leaves.
