Manchester Tart

  • RECIPE MAKES: 8 portions
  • PREP TIME: 1 hour 30 minutes (plus 3-4 hours in the fridge to set)
  • COOK TIME: 20 minutes
Step 1

Preheat oven to 190°C/fan 170°C/gas mark 5.

Step 2

For the pastry base, place the Fate Low Protein All-Purpose Mix, margarine and caster sugar in a bowl and rub between your fingertips to a breadcrumb consistency.

Step 3

Add the water to the breadcrumbs and mix to form a pastry dough.

Step 4

Leave to rest for 10 minutes.

Step 5

For the filling, pour the ProZero, custard powder and sugar into a small saucepan, over a gentle heat and stir well.

Step 6

Keep stirring until the mixture starts to simmer and thickens and remove from the heat.

Step 7

Add the mixture to a large bowl and use a hand-held blender to blend for 30-40 seconds, then leave to cool.

Step 8

Place the pastry dough onto a clean dusted work surface and knead for 1 minute, until smooth.

Step 9

Using a rolling pin, roll the pastry out between two pieces of grease proof paper to a 28cm diameter circle.

Step 10

Lift the pastry into the pastry dish using the rolling pin and press the pastry around the edge of the dish using your thumb.

Step 11

Cut the excess pastry from the sides of the dish and using a fork, prick the pastry base.

Step 12

Bake in the oven for 20 minutes or until golden brown.

Step 13

Set aside and allow to cool.

Step 14

Using the back of a spoon spread the jam around the base of the pastry.

Step 15

Pour the cooled custard mixture over the jam, sprinkle over the desiccated coconut and top with the glacé cherry half.

Step 16

Allow to chill in the fridge for 3-4 hours or until set.

Serving Suggestion: Serve with low protein cream or ice cream.

 

Top Tip! Sprinkle some nutmeg and cinnamon into the custard mixture for a spiced flavour.

  • 250g Fate Low Protein All-Purpose Mix (plus extra for dusting)
  • 125g Soft margarine
  • 30g Caster sugar
  • 60ml Water
  • For filling:
  • 400ml ProZero
  • 50g Custard powder
  • 30g Sugar
  • 4 tbsp Strawberry jam
  • 10g Desiccated coconut (0.65g protein)
  • 1 Glacé cherry, halved
  • You will need a 22cm pastry dish and a hand-held blender.
