Jackfruit Stir Fry

Method
Step 1
Heat the sesame oil in a pan over a medium heat, add the onion, green pepper, fennel, mushrooms, baby corn, garlic and jackfruit to the pan and cook for 5 minutes.
Step 2
Add the chow mein stir fry sauce, cook for another minute and serve.
Serving Suggestion:
Serve with low protein rice or spiralised vegetables.
Top Tip:
Add some chilli powder for a spicy kick!
Ingredients
- 2 tbsp Sesame oil
- 1 Onion, thinly sliced
- 1 Green pepper, thinly sliced
- 100g Fennel, thinly sliced
- 50g Mushrooms, thinly sliced
- 4 Baby corn, thinly sliced
- 2 Garlic cloves, crushed
- 140g Tinned jackfruit, drained and shredded
- 1 sachet Blue Dragon chow mein stir fry sauce (0.9g protein/100g)
