Italian Sweet Potatoes

Method
Step 1
Preheat the oven to 180°C/160°C fan/gas mark 4.
Step 2
Toss the sweet potatoes with the MEVALIA BREAD MIX in a mixing bowl.
Step 3
Add the olive oil, garlic, fresh herbs, salt and pepper, making sure the potatoes are fully coated.
Step 4
Place in a roasting tin and roast in the oven for 25-30 minutes, half way through the cooking and add the cherry tomatoes.
Step 5
To serve drizzle with a little olive oil and fresh parsley.

- 500g Sweet potatoes peeled and diced
- 1 tbsp Mevalia Bread Mix
- 50ml Olive oli
- 2 Garlic, finely diced cloves
- 1 sprig Fresh rosemary, chopped
- 1 sprig Fresh thyme, chopped
- 1 sprig Fresh parsley, chopped
- 1 tbsp Sea salt
- 1/2 tsp Ground black pepper
- 12 Cherry tomatoes, halved
