Gumbo

Method
step 1
Put a pan on a medium heat and add the butter. Allow to melt and leave for 1 minute until the butter is slightly browned.
step 2
Add the Fate Low Protein All-Purpose Mix and mix. Allow to cook for 2 minutes.
step 3
Add the peppers, celery, onion, okra, butternut squash, mushrooms, sweet potato, garlic and Cajun seasoning and mix well.
step 4
Add the chopped tomatoes and vegetable stock and stir. Allow to simmer for 1 hour or until all the vegetables are soft.
Serving suggestion: Serve with low protein flatbreads or rice

- 150g Sweet potato, peeled and diced
- 4 Cloves garlic, minced
- 2 tbsp Cajun seasoning
- 400g Chopped tomatoes
- 750ml Vegetable stock
