Fruit Scone

  • RECIPE MAKES: 4 scones
  • COOK TIME: 35 minutes
Step 1

Pre-heat the oven to 200°C/fan 180°C/gas mark 6

Step 2

Mix the Prozero and psyllium husk together in a bowl and allow to stand until the mixture thickens.

Step 3

In a separate bowl, place the butter and Fate Low Protein All-Purpose Mix and baking powder.

Step 4

Rub together with your fingertips until you get a sand-like texture.

Step 5

Add the sugar, mixed spice and raisins to the flour mixture.

Step 6

Add the liquid mixture into the flour mixture and mix to form a sticky dough.

Step 7

Turn the dough out onto a lightly dusted surface and knead for 1 minute.

Step 8

Roll the dough into a ball and flatten the top down to an approximate depth of 2 cm.

Step 9

Using a 6.5 cm scone cutter, cut out 4 scones.

Step 10

Transfer the scones to a lined baking tray and bake in the oven for 20 minutes until golden brown

Step 11

Leave to cool fully on a wire rack.

  • 180ml ProZero
  • 4g Psyllium husk
  • 40g Butter
  • 250g Fate All-Purpose Low Protein Mix (plus extra for dusting)
  • 2 tsps Baking powder
  • 40g Caster sugar
  • 1tsp Mixed spice
  • 60g Raisins
