‘Fish’ cakes

  • RECIPE MAKES: 2 ‘fish’ cakes
  • PREP TIME: 25 minutes
  • COOK TIME: 20 minutes
Step 1

Place the sweet potato in a saucepan and boil over a medium heat until soft.

Step 2

Drain excess water and mash.

Step 3

Add the banana blossom, spring onions, parsley, lemon juice and salt and pepper to taste and combine.

Step 4

Using your hands, shape into 2 patties.

Step 5

Heat the deep fat fryer to a medium heat according to manufacturer’s instructions.

Step 6

Place the low protein bread the blender and blitz until it reaches a breadcrumb consistency.

Step 7

Place the Fate Low Protein All-Purpose Mix, ProZero and breadcrumbs into separate bowls.

Step 8

Dip the patties in the Fate, then the ProZero and finally coat the breadcrumbs.

Step 9

Using a slotted spoon or tongs, place in the deep fat fryer and cook until the breadcrumbs are golden.

Step 10

Remove from the deep fat fryer and place on kitchen towel to remove excess oil.

  • 100g Sweet potato, peeled and chopped into cubes 
  • 100g Tinned Banana blossom, drained and chopped 
  • 2 Spring onions, finely chopped  
  • 20g Fresh parsley, chopped 
  • Juice of ½ lemon 
  • Salt and pepper to taste 
  • 50g Fate Low Protein All-Purpose Mix  
  • 100ml ProZero 
  • 300g Mevalia Bread, blitzed into breadcrumbs
