Fiery Ginger Sweet Potato Salad

Method
Step 1
Boil the sweet potato for 6 minutes, add baby corn and cook for another 3-4 minutes.
step 2
Once cooked, drain and run under cold water.
step 3
In a bowl, mix the sweet potato and corn with remaining ingredients until combined.
Ingredients
- 50g Sweet potato, peeled and chopped into large chunks
- 2 Baby corn, sliced
- 25g Red onion, peeled and diced
- 35g Mixed peppers, diced
- 40g Mayonnaise
- 1 tbsp Maple syrup
- 2g Ginger, grated
- Salt and pepper to taste
