Place a pan over a medium heat and add the oil. Add the pitta and toast lightly for 1 minute.

Put the toasted pitta into a large bowl and add the rest of the salad ingredients.

In a jug, mix the dressing ingredients together.

Pour the dressing over the salad and toss to coat.

  • For the salad:
  • 1 tbsp Oil
  • 1 Low protein pitta bread, chopped
  • 1 Romaine lettuce, chopped
  • 1 Cucumber, deseeded and sliced
  • 5 Radishes, chopped
  • 1 Vine tomato, chopped
  • ½ Green pepper, deseeded and chopped
  • 2 Spring onions, chopped
  • For the dressing:
  • 3 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 2 Garlic cloves, crushed
  • 1 tsp Sumac powder
  • 1 tsp Balsamic glaze
  • ½ tsp Fresh mint, chopped
  • Salt and pepper to taste
