Fate Onion Bhaji and Mint Raita

This recipe has become one of our favourites. They are so useful because they can be served hot or cold, as part of a meal, as a starter, or as a snack. Traditionally they are shaped into rough balls and deep fried, but if you want to shallow fry them, it is best to flatten them slightly before you cook them to ensure they cook evenly. If you like them really hot and spicy, just add more chopped green chillies. This recipe makes around 10-12 Bhajis. They freeze well, so it’s good to make double the recipe and store them in the freezer. Just defrost as needed, and eat cold, or reheat in the oven or microwave.

For the Fate Onion Bhaji:
Step 1

Place the sliced onion, coriander, chillies, curry powder and paprika into a mixing bowl. Add the Fate Low Protein All Purpose Mix and the salt and pepper. Stir well. Pour in the water and mix well until blended together.

Step 2

It is best to shape and cook one bhaji first to test the flavour. Using a little Fate Low Protein All Purpose Mix on your hands, take about a tablespoon of the mixture (about 30g) and form it into a rough ball. It does not have to be very smooth. Flatten slightly if you are going to shallow fry. Either shallow fry or deep fry this Bhaji for a few minutes until golden brown and cooked through. Taste to check the seasoning and add more curry powder to the rest of the mixture if needed.

Step 3

Shape and cook the remaining mixture. Drain well. Serve hot or cold.

For the Fate Mint Raita (2 Portions):
Step 1

Place the mayonnaise into a small bowl and add just one tablespoon of water. Stir well until smooth. Then add the other tablespoon of water. Mix until blended well.

Step 2

Add the mint, but make sure that you take as little of the vinegar from the jar as possible, or the Raita will taste too sharp. Serve with Fate Onion Bhaji.

  • For the Fate Onion Bhaji:
  • 50g onion, thinly sliced
  • 1-2 tbsp fresh coriander, roughly chopped
  • 2 tsp fresh chillies, finely chopped
  • 3 tsp curry powder such as Madras or Rogan Josh
  • 2 tsp paprika
  • 150g Fate Low Protein All Purpose Mix
  • 1 tsp salt
  • Black pepper to season
  • 120ml water
  • Oil for cooking
  • Extra Fate Low Protein All Purpose Mix for shaping
  • For the Fate Mint Raita:
  • 1 tbsp suitable mayonnaise
  • 2 tbsp water
  • 2 tsp jar mint sauce
