Eyeball Doughnuts and Webbed Doughnuts

  • RECIPE MAKES: 8 doughnuts
  • PREP TIME: 20 minutes
  • COOK TIME: 6 minutes
Step 1

Heat deep fat fryer as per manufacturer’s instructions.

Step 2

Pour the yeast, psyllium husk, vanilla essence and warm water into a jug and stir and allow to stand for 5 minutes.

Step 3

Add the yeast mixture, Fate low protein all-purpose mix and sugar into a bowl and mix into a dough.

Step 4

Leave the dough to stand for 10 minutes.

Step 5

Dust your hands and work surface with Fate low protein all-purpose mix and divide the dough into 8 even portions and roll into smooth balls.
 

Step 6

To shape the balls into rings, push the handle of a spoon through the centre of the ball.

Step 7

Dust your index finger with Fate low protein all-purpose mix and push it through the hole in the dough ball and turn the ball around your finger to form a ring.

Step 8

Repeat with all the dough balls.

Step 9

Using a slotted spoon place the dough rings into the deep fat fryer.

Step 10

Deep fry for 3 minutes on each side or until golden brown.

Step 11

Carefully remove using the slotted spoon and place on kitchen towel to remove excess oil.

Step 12

Place the doughnuts on a wire rack to cool.

Step 13

To decorate, firstly make the base coloured-icing; mix the warm water and food colouring together in a bowl and gradually add in the icing sugar, until a smooth paste is formed.

Step 14

Using a teaspoon, spread the icing over the cooled doughnuts and leave them to stand to allow the icing set for 15 minutes.

Step 15

Use other permitted toppings to decorate as scary as you can!

  • You will need a deep fat fryer.
  • Ingredients:
  • 6g Yeast
  • 7g Psyllium Husk
  • 1 tsp Vanilla essence
  • 200ml Warm water
  • 240g Fate Low Protein All-Purpose Mix (plus extra for dusting)
  • 40g Caster sugar
  • To decorate:
  • 16ml Warm water
  • 125g Icing sugar
  • 4 Drops food colouring (your choice of colour)
  • Permitted toppings: icing, coloured icing pens, edible sugar eyes, Sainsbury’s freedom mallows vegetarian mini pink and white vanilla marshmallow bites etc.
