Dim Sum

  • RECIPE MAKES: 8 portions

Step 1

Add the Fate Low Protein All-Purpose Mix, water, oil and vinegar to a bowl.

Step 2

Mix until combined and knead well on a clean, lightly dusted surface until the dough is smooth.

Step 3

Using a rolling pin roll, roll the dough to a 3cm diametre and slice into 8 equal pieces.

Step 4

Roll each piece into a 10cm diameter circle.

Step 5

Pre-heat bamboo steamer or household steamer.

Step 6

For the filling, heat a frying pan over a medium heat and add oil.

Step 7

Add the onion, pepper, mushrooms, garlic, thai basil and thai 7 spice to the pan and stir for 2-3 minutes or until vegetables soften.

Step 8

Take one of the dough circles into the palm of your hand and place 1 tbsp of filling in the centre.

Step 9

Fold the dough over into a semi-circle and gently press the edges with your finger tips to seal.

Step 10

Repeat the process to fill all dough circles.

Step 11

Carefully place each dim sum into the steamer, using prongs and steam for 15 minutes or until they appear translucent.

Step 12

Using a pair of tongs remove from the steamer and serve.

  • 100g Fate low protein all-purpose mix (plus extra for dusting)
  • 50ml Warm water
  • 10ml Vegetable oil
  • 2ml Rice wine vinegar
  • For filling:
  • 2tbsp Sesame seed oil
  • 4 Spring onions (finely chopped)
  • 1 Red pepper (finely diced)
  • 4 Mushrooms (finely diced)
  • 4 Garlic cloves (finely chopped)
  • 10g Fresh thai basil (finely chopped)
  • 2tsp Thai 7 spice
  • For this recipe you will need a general household steamer or bamboo steamer
