Courgette Muffins
- RECIPE MAKES: 4 muffins
- PREP TIME: 10 minutes
- COOK TIME: 15-20 minutes
Method
Step 1
Pre-heat the oven to 200˚C/180˚C fan/gas mark 6.

Place Violife creamy original, brown sugar and ground cinnamon in a large bowl, beat for 1-2 minutes until smooth and combined.

Add baking powder and Fate low protein all-purpose mix to the Violife mixture.
step 4
In a separate bowl, mix egg replacer and ProZero. Add this to the Violife mixture, beat until a soft smooth batter is formed.
step 5
Fold grated courgette into the mixture.
step 6
Divide mixture into 4 muffin cases.
step 7
Bake in oven for 15 to 20 minutes until golden brown.
step 8
Allow to cool and enjoy.
Top Tip!
Sprinkle lightly with icing sugar once cooled.
Fate low protein all-purpose mix and ProZero are foods for special medical purposes and must be used under medical supervision.

- ½ tsp Egg replacer
- 100ml ProZero
- 70g Courgette, grated
