'Cooked Meat' & Sweetcorn Pasta Salad
- RECIPE MAKES: serves 1 portion
- COOK TIME: 15 minutes
Method
Step 1
Place the Mevalia Penne to a pan of boiling water and cook for 5-7 minutes, drain.
Step 2
Whilst the pasta is cooking, add the chicken, baby sweetcorn, mayonnaise and white wine vinegar to a bowl and combine.
Step 3
Once the pasta is cooked, leave to cool.
Step 4
Combine the pasta with the rest of the ingredients and serve.
Step 5
Great for batch cooking to enjoy for lunch.

- 2 slices slices vegan cooked 'meat', diced
- 30g baby sweetcorn chopped
- 3 tsp vegan mayonnaise
- 100g Mevalia Penne
- 2 tsp white wine vinegar
- salt and pepper
- chopped fresh chives
