'Chocolate' Orange Mini Cakes

  • RECIPE MAKES: 12 mini cakes
  • PREP TIME: 40 minutes
  • COOK TIME: 10 minutes

Pre-heat the oven to 160°C/fan 140°C/gas mark 3.

Cream together the caster sugar and margarine in a large bowl.

Add the Fate Low Protein All-Purpose Mix and the baking powder and rub together with your fingertips until it resembles breadcrumbs.

In a separate bowl, mix together the ProZero, egg replacer and vanilla essence.

Add the wet mixture to the dry mixture and mix until well combined.

Using spray oil, spray each hole of the bun tin to lightly grease.

Divide the cake mixture between the 12 holes.

Bake for 10 minutes and remove from oven, place on a wire rack and allow to cool fully.

Whilst the cakes cool, melt the Vitabite either in the microwave on a low heat or over a pan of simmering water.

Using your thumb press the middle of each cake down to make a small hole and fill with marmalade.

To finish, pour over a thin layer of the melted Vitabite and allow to set.

  • 50g Caster sugar
  • 50g Soft margarine
  • 100g Fate Low Protein All-Purpose Mix
  • 1 tsp Baking powder
  • 75ml ProZero
  • 1 tsp Egg replacer
  • 1 tsp Vanilla essence
  • Spray oil
  • 50g Permitted ‘shredless’ marmalade
  • 6x 25g Vitabite bars
  • You will need a 12-hole bun tin
