Carrot Crepes

  • RECIPE MAKES: 8 crepes
  • PREP TIME: 10 minutes
  • COOK TIME: 20 minutes
step 1

Place all the ingredients apart from the butter into a large bowl and using a hand blender, blend until smooth.

Place a frying pan over a medium heat and add the butter.

Using a pastry brush, spread the butter so that the whole pan is covered.

Pour a tablespoon of mixture into the pan and spread into a circle with the back of a spoon.

Allow to cook until bubbles begin to form on the surface of the crepe and flip.

step 6

Cook for a further minute and remove from the pan.

step 7

Repeat step 4-6 until all the mixture is used up.

  • 100g Carrot, grated
  • 150ml ProZero
  • 90g Fate Low Protein All-Purpose Mix
  • ½ tsp Cumin
  • ½ tsp Egg replacer
  • ½ tsp Baking powder
  • 20g Butter, melted
  • You will need an electric hand-held blender and a pastry brush.
