Banoffee Pie

  • RECIPE MAKES: 2 portions

Step 1

Crush the shortbread biscuits and mix with the melted butter in a bowl.

Step 2

Add to the baking tin and using the back of a spoon press the mixture firmly. Chill in the fridge for 30 minutes.

Step 3

Meanwhile, add the butter and brown sugar to a saucepan over a low heat and stir until the butter has melted and the sugar has dissolved.

Step 4

Add ProZero, bring to the boil and simmer for 15 minutes stirring continuously, until the mixture has reduced and thickened.

Step 5

Take off the heat and leave to cool for 15 minutes.

Step 6

Pour the caramel onto the biscuit base and chill for a further 10 minutes in the fridge.

Step 7

Layer on the banana slices and top with the ProZero cream.

Step 8

Sprinkle with grated Vitabite and chill for 1 hour or until set.

ProZero and Vitabite are foods for special medical purposes and must be used under medical supervision.

  • For the base:
  • 5 Low protein shortbread biscuits (see recipe)
  • 25g Butter, melted
  • For the caramel:
  • 100g Light brown sugar
  • 100g Unsalted butter
  • 100ml ProZero
  • For the toppings:
  • 1 Banana, peeled and sliced
  • 100g ProZero extra thick double ‘cream’
  • 1 x 25g Vitabite, grated
