Aubergine Stew with Dumplings

Heat oil in a pan over a medium heat and add the peppers, garlic, aubergine, red onion, cherry tomatoes, courgette, basil, and oregano. Fry for 5 mins or until the vegetables are starting to soften.

Add the chopped tomatoes and stock and simmer for 20 minutes.

Preheat the oven to 180°C fan/200°C/Gas mark 6.

Pour the mixture in an oven-proof dish.

To make the dumplings, add the Fate Low Protein All-Purpose mix and baking powder into a bowl and stir in the butter until evenly distributed. You still want to see lumps of butter in the mixture.

Add the Violife and the water and mix with your hands to make a soft, slightly sticky dough (add a little more water if needed).

Divide into 4 and roll into balls.

Arrange the dumplings over the stew, cover and cook for 30 minutes until the dumplings are golden brown.

  • 2 tbsp Olive oil
  • 1 Red pepper, diced
  • 1 Yellow pepper, diced
  • 2 Garlic cloves, chopped
  • 2 Aubergine, diced
  • 1 Red onion, peeled and sliced
  • 12 Cherry tomatoes, halved
  • 2 Courgettes, diced
  • 1 tsp Basil
  • 1 tsp Oregano
  • 350ml Chopped tomatoes
  • 100ml Vegetable stock
  • For the dumplings
  • 100g Fate Low Protein All-Purpose Mix
  • ½ tsp Baking powder
  • 25g Cold butter, grated
  • 50g Violife Mozzarella Style, grated
  • 60ml Cold water
