Step 1
Add all ingredients to the slow cooker and stir.
Step 2
Cook on medium for 6 hours or 8 hours on low.
Step 3
Remove bay leaf prior to serving.
Top tip: Serve with LLW Soda bread (see recipe).

- 200g Butternut squash, peeled, deseeded and diced
- 250g Carrots, peeled and diced
- 250g Parsnips, peeled and diced
- 100g Swede, peeled and diced
- 320g Sweet potatoes, peeled and diced
- 2 Celery sticks, sliced
- 3 Garlic cloves, crushed
- 400g tin Chopped tomatoes
- 200ml Vegetable stock
- 1 tsp Tomato puree
- 2 tsp Worcestershire sauce
- 1 Bay leaf
- 1 tbsp Dried sage
- 1 tsp Cracked black pepper
- ½ tsp Sea salt
