Slow Cooker Vegetable Stew

You will need a slow cooker (3.5 litre slow cooker used in this recipe)

Step 1

Add all ingredients to the slow cooker and stir.

Step 2

Cook on medium for 6 hours or 8 hours on low.

Step 3

Remove bay leaf prior to serving.

Top tip: Serve with LLW Soda bread (see recipe).

  • 150g Onion, peeled and chopped
  • 200g Butternut squash, peeled, deseeded and diced
  • 250g Carrots, peeled and diced
  • 250g Parsnips, peeled and diced
  • 100g Swede, peeled and diced
  • 320g Sweet potatoes, peeled and diced
  • 2 Celery sticks, sliced
  • 3 Garlic cloves, crushed
  • 400g tin Chopped tomatoes
  • 200ml Vegetable stock
  • 1 tsp Tomato puree
  • 2 tsp Worcestershire sauce
  • 1 Bay leaf
  • 1 tbsp Dried sage
  • 1 tsp Cracked black pepper
  • ½ tsp Sea salt
