Preheat oven to 200°C/fan 180°C/gas mark 6.
Add Fate Low Protein All-Purpose Mix and butter into a bowl and rub together until it resembles a fine breadcrumb texture.
Add cold water and gently mix with hands until you get a pastry ball.
Leave to rest for 5 minutes.
Divide pastry into 6 pieces.
Lightly dust the work surface with Fate Low Protein All-Purpose Mix.
Roll pastry pieces out into evenly sized circles.
Line bun holes with pastry, making sure you press it into sides of the tin.
Add butter, leeks, mushrooms and peppers in a pan and cook over a low heat (do not fry).
Divide vegetable mixture between the pastry cases.
Sprinkle each tart with Violife and mixed herbs.
Bake for 20 minutes.
You will need a shallow bun tin!
