Sweet Fruit Pockets

Wrap

Step 1

Place water, psyllium husk, and yeast in a bowl, stir and leave to thicken for 10 minutes. Once thickened add oil and stir through.

Step 2

In a separate bowl, add mixed spice, sugar and Fate Low Protein All-Purpose Mix.

Step 3

Add psyllium mix to bowl. Using your hands, mix until a dough is formed. 

Step 4

Dust the work surface and knead dough for 2-3 minutes, then leave to rise for 20 minutes. 

Step 5

Divide dough into 12 portions and coat with Fate Low Protein All-Purpose Mix. 

Step 6

Roll each portion between greaseproof paper into a 6cm circle. 

Step 7

Using a hot dry frying pan cook on both sides for 30-60 seconds. 

To make the pockets:

Step 1

Turn on the panini maker*. 

Step 2

Mix filling of choice.

Step 3

Divide mixture between 6 cooked wraps. 

Step 4

Fold wraps in half then place in panini maker and cook for 1 minute. 

Step 5

Cut in half to make a nice easy finger food!

Fate Low Protein All-Purpose Mix is a food for special medical purposes and must be used under medical supervision. This recipe has been specifically designed for a low protein diet. Refer to labels for allergen and other product information. 

*CHEF TIP 

If you don’t have a panini maker use a dry, hot frying pan instead. 

Add filling to the wrap and fold over, pressing down firmly. Add back to dry, hot frying pan and cook again for 30 seconds on each side, using a fish slice to flatten the pockets.

  • 190ml Water, warm
  • 4g Psyllium husk
  • 4g Dried yeast
  • 20ml Oil
  • 2g Mixed spices
  • 5g Brown sugar
  • 220g Fate Low Protein All-Purpose Mix, plus extra for dusting
  • Filling - Apple and sultanas (6 fillings)
  • 150g Sweet apples, peeled, cored, cooked & mashed
  • 20g Sultanas, finely chopped
  • Filling - Banana and pear (6 fillings)
  • 40g Banana, peeled & mashed
  • 100g Pear, peeled, cored, cooked & mashed
