Root Vegetable Casserole

  • RECIPE MAKES: 20 Ice Cubes

Step 1

Steam vegetables and thyme for 15 minutes, until soft. 

Step 2

Mash until almost smooth (add some cooking water to loosen if needed).

  • 150g Sweet potato, peeled & diced
  • 150g Parsnip, peeled & diced
  • 100g Carrots, peeled & diced
  • 1 tsp Thyme, dried
