Rich Red Risotto

Method
Step 1
Cook low protein rice as per packet instructions. Once cooked, rinse with cold water and drain.
Step 2
Add oil to a saucepan and heat. Add onions, sweet potato, red pepper, mushrooms and garlic. Cook for 5 minutes.
Step 3
Add tomato purée and cooked low protein rice and cook for a further 2 minutes.
Step 4
Add tinned chopped tomatoes and bring to the boil. Simmer for 2-4 minutes.
Step 5
Once cooked, mash with a fork until almost smooth.

- 3 tsp Oil
- 20g Onions, finely chopped
- 100g Sweet potato, peeled & grated
- 50g Red pepper, de-seeded & chopped
- 50g Mushrooms, finely chopped
- ½ Clove of garlic, crushed
- ½ tsp Tomato purée
- 100g Tinned chopped tomatoes
- 80ml Water
