Cook pasta slightly longer than packet instructions, so it is a softer texture and drain.
Meanwhile, place butter in saucepan and heat. Add mushrooms, courgette, leeks and garlic and cook for 8 minutes or until leeks are soft.
Add water and ProZero to vegetables and bring to the boil. Simmer for 10 minutes, until reduced.
Once vegetables are cooked, stir in Violife.
Add in cooked pasta, and mash with a fork until almost smooth.
